Directions

  1. 1

    Prepare the Ingredients

Start by hard-boiling the eggs. Place the eggs in a pot and cover them with water. Bring to a boil, then cover and remove from heat. Let them sit for 12 minutes, then cool in ice water before peeling.

  2. 2

    Toast the Bread

While the eggs are cooling, toast the sourdough bread slices to your desired level of crispiness.

  3. 3

    Mash the Avocado

Halve the avocado, remove the pit, and scoop the flesh into a bowl. Mash it with a fork until creamy. Season with salt and pepper to taste.

  4. 4

    Slice the Eggs and Tomatoes

Once the eggs are peeled, slice them into rounds. Slice the grape tomatoes in half.

  5. 5

    Assemble the Toast

Spread the mashed avocado generously over each slice of toasted sourdough. Top with sliced hard-boiled eggs, halved grape tomatoes, pickled red onions, and a handful of arugula.

  6. 6

    Finish with Balsamic Glaze

Drizzle balsamic glaze over the top of the assembled toast. Add additional salt and pepper if desired.

  7. 7

    Serve

Serve immediately while the toast is still warm.
