Stir in the corned beef, caraway seeds, salt, and pepper. Cook until the mixture is heated through and slightly crispy, about 5-7 minutes. Keep warm.

Poach the Eggs
In a separate pot, bring water to a gentle simmer. Crack the eggs into a small bowl, then gently slide them into the simmering water. Poach for about 3-4 minutes for a runny yolk, or until desired doneness.

While the eggs are poaching, toast the sourdough bread until golden brown.
