Pretzel Preparation

    Activate Yeast

    In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    Make Dough

    Stir in the flour and salt until a dough forms. Knead on a floured surface for about 8-10 minutes until smooth.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour until doubled in size.

    Shape Pretzels

    Preheat the oven to 450°F (230°C). Divide the dough into 8 pieces. Roll each piece into a long rope and twist into a Celtic knot shape.

    Baking Soda Bath

    In a large pot, bring 10 cups of water and the baking soda to a boil. Boil each pretzel for about 30 seconds, then remove and place on a baking sheet.

    Egg Wash

    Beat the egg and brush it over each pretzel. Sprinkle with coarse sea salt.

    Bake

    Bake in the preheated oven for about 12-15 minutes or until golden brown.
