Preparation

  1. 1

    Prepare the Potatoes

Wash and peel the potatoes. Cut them into small, even cubes for uniform cooking.

  2. 2

    Chop the Vegetables

Dice the bell pepper and onion. Mince the garlic. If using fresh spinach, wash and chop it.

Cooking

  1. 3

    Cook the Potatoes

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the cubed potatoes and season with salt, black pepper, and smoked paprika. Cook for 10-15 minutes, stirring occasionally, until potatoes are golden brown and tender.

  2. 4

    Add Vegetables

Once the potatoes are cooked, add the diced bell pepper, onion, and minced garlic to the skillet. Cook for another 5 minutes until the vegetables are softened.

  3. 5

    Incorporate Spinach and Corned Beef

Stir in the spinach and chopped corned beef. Cook until the spinach wilts and everything is heated through, about 3-5 minutes.

  4. 6

    Season the Hash

Add red pepper flakes and adjust seasoning with additional salt and pepper as needed. If using fresh herbs, add them now.

  5. 7

    Cook the Eggs

In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the pan and cook to your desired doneness (sunny-side up, over-easy, etc.).

  6. 8

    Serve

Divide the hash among plates and top each serving with a cooked egg. Enjoy your Village Hash!
