Pasta Preparation
Cook the Penne
In a large pot of salted boiling water, add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Roasted Tomato Cream
Roast the Tomatoes
Preheat your oven to 200°C (400°F). In a baking dish, toss the cherry tomatoes with olive oil, minced garlic, salt, and black pepper. Roast in the oven for about 25-30 minutes or until the tomatoes are blistered and softened.
Make the Cream
Once the tomatoes are roasted, transfer them to a blender. Add the heavy cream and blend until smooth. Adjust seasoning with additional salt and pepper if needed.
Combine and Serve
Mix Pasta with Sauce
In a large mixing bowl, combine the cooked penne pasta with the roasted tomato cream. Toss until the pasta is well-coated.
Plate and Garnish
Serve the pasta in bowls, topped with fresh basil leaves and pieces of burrata cheese. Drizzle with a little extra olive oil if desired.
