Ravioli Preparation

Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling
In another bowl, mix the ricotta cheese, grated Parmesan, and a pinch of salt until well combined.

Roll Out the Dough
After resting, divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin.

Fill the Ravioli
Place small spoonfuls of the cheese mixture onto one sheet of pasta, spacing them about 2 inches apart. Moisten the edges with water, then fold the pasta over and press to seal.

Prepare the Breading
In a shallow bowl, beat the eggs. In another bowl, combine breadcrumbs, salt, and black pepper.

Bread the Ravioli
Dip each ravioli into the beaten eggs, then coat with breadcrumbs. Ensure they are fully covered.

Fry the Ravioli
Heat oil in a deep frying pan over medium heat. Fry the ravioli in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Add Tomatoes and Seasoning
Add crushed tomatoes, oregano, salt, and black pepper to the saucepan. Simmer for 20-25 minutes, stirring occasionally.

Stir in fresh basil just before serving.
