Prepare the Steak

Take the ribeye steak out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps the steak cook evenly.

Season the Steak

Pat the steaks dry with paper towels. Rub both sides with olive oil, then season generously with salt and black pepper. Make sure to cover the entire surface of the steak.

Heat the Pan

Place a large skillet or frying pan over high heat and let it get very hot. A cast-iron skillet works best for this.

Sear the Steak

Once the pan is hot, add the steaks to the skillet. Sear for 4-5 minutes without moving them, until a crust forms on the bottom.

Flip and Add Aromatics

Flip the steaks using tongs. Add the crushed garlic cloves and rosemary sprigs to the pan. Cook for another 4-5 minutes for medium-rare. Adjust cooking time according to your desired doneness.

Baste the Steak

As the steak cooks, tilt the pan slightly and use a spoon to baste the meat with the melted fat and juices for added flavor.

Let the Steak Rest

Once cooked to your liking, remove the steak from the pan and place it on a cutting board. Tent with foil and let it rest for 5-10 minutes to allow the juices to redistribute.
