Eggplant Preparation

Prepare the Eggplant
Slice the eggplants into 1/4 inch thick rounds. Sprinkle the slices with salt and let them sit for about 30 minutes to draw out excess moisture. Rinse the slices under cold water and pat dry with paper towels.

Make the Veal Mixture
In a large bowl, combine ground veal, minced garlic, chopped onion, parsley, salt, black pepper, egg, and breadcrumbs. Mix until well combined.

Form Veal Patties
Shape the veal mixture into small patties, about 2 inches in diameter.

Cook the Veal Patties
In a skillet, heat a tablespoon of olive oil over medium heat. Cook the veal patties until browned and cooked through, about 4-5 minutes per side. Remove from the pan and set aside.

Simmer the Sauce
Add the crushed tomatoes, sherry wine, oregano, salt, and black pepper to the skillet. Stir well, bring to a simmer, and let cook for about 15-20 minutes, stirring occasionally. Add chopped basil before removing from heat.

Assemble the Sorrentino
In a baking dish, layer the cooked eggplant slices, followed by the veal patties, and then pour the sherry marinara sauce over the top. Sprinkle with shredded mozzarella and grated Parmesan cheese.

Bake
Preheat the oven to 375°F (190°C). Bake for 25-30 minutes or until the cheese is bubbly and golden. Remove from the oven and let it cool for a few minutes.

Garnish and Serve
Garnish with fresh basil leaves and serve hot.
