Method

Cooking the Pasta

    Boil Water

    In a large pot, bring 4 quarts of water to a rolling boil. Add 1 tablespoon of salt to the water.

    Cook Pasta

    Add 8 cups of penne pasta to the boiling water. Cook according to package instructions until al dente, usually about 10-12 minutes.

    Drain Pasta

    Once cooked, drain the pasta in a colander and set aside. Reserve a cup of pasta water for later use.

Preparing Shrimp Diavlo Sauce

    Heat Olive Oil

    In a large skillet, heat 3 tablespoons of olive oil over medium heat.

    Sauté Garlic

    Add 4 teaspoons of minced garlic to the skillet and sauté for about 1 minute until fragrant.

    Add Spices

    Stir in 1 teaspoon of crushed red pepper flakes, 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1 teaspoon of salt, and 1 teaspoon of black pepper.

    Add Tomatoes

    Pour in the 28 oz can of crushed tomatoes. Bring the mixture to a simmer and let cook for 10 minutes, stirring occasionally.

    Cook Shrimp

    Add 1 lb of peeled and deveined shrimp to the sauce. Cook for an additional 5-7 minutes until the shrimp are pink and cooked through.

    Combine Pasta and Sauce

    Add the cooked penne pasta to the skillet with the sauce. Toss to combine, adding reserved pasta water as needed to reach desired consistency.

    Garnish and Serve

    Remove from heat and stir in 1 tablespoon of chopped fresh parsley and 1 cup of grated Parmesan cheese. Serve hot.
