Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Vegetables
Wash and chop the Roma tomatoes in half. Remove the seeds from the red bell pepper and cut it into quarters. Peel the yellow onion and cut it into wedges. Peel the garlic, leaving the cloves whole.

Roast the Vegetables
In a large baking sheet, place the tomatoes, red bell pepper, onion wedges, and garlic cloves. Drizzle with olive oil and sprinkle with salt, black pepper, and sugar. Toss to coat evenly. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
