Method
Preparation
- 1
Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides. Dredge each piece in all-purpose flour, shaking off the excess.
- 2
Heat the Oil
In a large skillet over medium-high heat, heat the olive oil until shimmering.
Cooking
- 3
Cook the Chicken
Add the floured chicken breasts to the skillet and cook for about 4-5 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
- 4
Make the Sauce
In the same skillet, reduce the heat to medium and add the unsalted butter. Allow it to melt, then stir in the fresh lemon juice and capers. Scrape any browned bits from the bottom of the skillet as you mix.
- 5
Combine
Return the chicken to the skillet and spoon the sauce over it. Let it simmer for an additional 2-3 minutes to absorb the flavors.
Serving
- 6
Garnish and Serve
Sprinkle the chopped fresh parsley over the chicken before serving. Serve hot with the lemon-caper sauce drizzled on top.
