Cooking Pasta

Boil Water
In a large pot, bring 2 liters of water to a rolling boil over high heat. Add 1 tablespoon of salt to the water.

Cook Pasta
Once the water is boiling, add 200 grams of pasta. Stir occasionally and cook according to package instructions until al dente, usually around 8-10 minutes.

Drain Pasta
Once cooked, drain the pasta in a colander and set aside. Reserve a cup of pasta water if needed for the sauce.
Making Red Sauce

Sauté Aromatics
In a large saucepan, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped onion and 3 minced garlic cloves, and sauté until the onion is translucent, about 5 minutes.

Add Tomatoes and Seasonings
Stir in 400 grams of canned crushed tomatoes, 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of sugar. Bring the sauce to a simmer.

Simmer Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally, until it thickens slightly.

Combine Pasta and Sauce
Add the drained pasta to the sauce and toss to combine. If the sauce is too thick, gradually add reserved pasta water until you reach the desired consistency.

Serve
Plate the pasta and sauce, and garnish with fresh basil leaves. Serve hot.
