Prepare the Batter

In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Mix well.

Add Egg and Water

Add the egg and cold water to the dry ingredients. Whisk until the batter is smooth and well combined.

Heat the Oil

In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Coat the Olives

Dip each pitted green olive into the batter, ensuring they are fully coated.

Fry the Olives

Carefully drop the coated olives into the hot oil in batches. Fry for about 3-4 minutes or until golden brown. Remove and drain on paper towels.

Prepare the Oven

Preheat your oven to 180°C (350°F).

Toss the Pecans

In a bowl, combine the pecans, olive oil, salt, smoked paprika, and maple syrup. Toss to coat the pecans evenly.

Roast the Pecans

Spread the pecans in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 10-12 minutes, stirring occasionally until they are fragrant and golden.
