Asparagus

Creolaise Sauce

Method

Preparing the Asparagus

  1. 1

    Wash and Trim the Asparagus

Rinse the jumbo asparagus spears under cold water to remove any dirt. Trim the woody ends of the asparagus by cutting about 1 inch off the bottom.

  2. 2

    Season the Asparagus

In a large bowl, toss the trimmed asparagus with olive oil, salt, and black pepper until evenly coated.

Grilling the Asparagus

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

  2. 4

    Grill the Asparagus

Place the seasoned asparagus directly on the grill grates. Grill for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.

Making the Creolaise Sauce

  1. 5

    Combine Ingredients

In a medium bowl, combine mayonnaise, Dijon mustard, hot sauce, cayenne pepper, lemon juice, minced garlic, and chopped parsley.

  2. 6

    Mix Well

Stir the ingredients together until well blended. Adjust seasoning with salt and additional hot sauce to taste.

Serving

  1. 7

    Plate the Asparagus

Once the asparagus is grilled to your liking, remove them from the grill and transfer to a serving platter.

  2. 8

    Serve with Creolaise Sauce

Serve the grilled asparagus warm with the Creolaise sauce drizzled on top or on the side as a dipping sauce.
