Cook the Sausages
In a large skillet over medium heat, add the olive oil. Once hot, add the Italian sausage links and cook for about 10-12 minutes, turning occasionally until they are browned and cooked through. Remove from skillet and set aside.

Sauté the Vegetables
In the same skillet, add sliced bell pepper and onion. Sauté for about 5 minutes until they start to soften. Add minced garlic, crushed red pepper flakes, salt, and black pepper. Cook for an additional 2-3 minutes until fragrant.

Assemble the Poboys
Slice the cooked sausages lengthwise and place them inside the sliced French baguettes. Top with the sautéed vegetables and sprinkle with chopped fresh parsley.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the cut potatoes to the hot oil, frying in batches to avoid overcrowding. Fry for about 5-7 minutes or until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
