Rinse the Rice

Place the long-grain white rice in a fine-mesh strainer and rinse it under cold running water until the water runs clear. This helps to remove excess starch.

Soak the Rice

In a large bowl, combine the rinsed rice and 4 cups of water. Let it soak for at least 4 hours or overnight for best results.

Blending

Blend the Mixture

After soaking, drain the rice and discard the soaking water. In a blender, combine the soaked rice, 2 cinnamon sticks, and 2 cups of fresh water. Blend until the mixture is smooth and creamy.

Straining and Flavoring

Strain the Mixture

Using a fine-mesh strainer or cheesecloth, strain the blended mixture into a large pitcher or bowl, pressing down with a spatula to extract as much liquid as possible.

Add Flavorings

Stir in the milk, sugar, vanilla extract, and a pinch of salt into the strained liquid. Mix well until the sugar is fully dissolved.

Serving

Garnish and Serve

Serve the horchata over ice in glasses. If desired, sprinkle a little ground cinnamon on top for garnish. Enjoy chilled!
