Preparation of Salmon

    Marinate the Salmon

    In a bowl, mix olive oil, salt, black pepper, and lemon juice. Add the salmon fillets and coat them evenly with the marinade. Cover and refrigerate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat, approximately 375°F (190°C).

    Grill the Salmon

    Remove the salmon from the marinade and place it on the preheated grill. Grill for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

    While the salmon is marinating, wash the arrow leaf spinach and pat it dry. Slice the Creole tomatoes into wedges. Drain and segment the mandarin oranges.

    In a large salad bowl, combine the arrow leaf spinach, Creole tomatoes, mandarin oranges, and roasted pecans. Drizzle with balsamic vinaigrette and toss gently to combine.

    Once the salmon is grilled, remove it from the grill and let it rest for a few minutes. Serve each salmon fillet on a plate alongside a generous portion of the salad.
