    Roast the Garlic

    Preheat your oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with a little olive oil, wrap in foil, and roast for about 30-35 minutes until soft and fragrant. Allow to cool, then squeeze the cloves out of their skins.

    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the angel hair pasta and cook according to package instructions until al dente, typically 3-5 minutes. Drain and set aside, reserving a cup of pasta water.

Cooking the Shrimp

    Prepare the Shrimp

    In a large skillet, heat the olive oil over medium heat. Add the shrimp to the pan, season with salt and black pepper, and cook for about 2-3 minutes on each side until they are pink and opaque. Remove the shrimp from the skillet and set aside.

    Make the Sauce

    In the same skillet, add the roasted garlic, white wine, lemon juice, and red pepper flakes. Bring to a simmer, scraping up any browned bits from the bottom of the pan. Let it reduce for about 3-5 minutes.

    Finish the Dish

    Stir in the butter until melted and the sauce is smooth. Return the shrimp to the skillet, toss to coat in the sauce, and add the cooked angel hair pasta. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.

Serving

    Plate the shrimp scampi and garnish with chopped parsley and lemon wedges. Serve immediately and enjoy!
