Prepare Tomatoes
Slice the green tomatoes into 1/2 inch thick slices. Sprinkle with salt and let sit for 10 minutes to draw out moisture.

Set Up Breading Station
In one bowl, place the all-purpose flour. In a second bowl, pour the buttermilk. In a third bowl, add the cornmeal, black pepper, and cayenne pepper.

Bread the Tomatoes
Dredge each tomato slice in flour, then dip into buttermilk, and finally coat with the cornmeal mixture. Ensure each slice is evenly coated.

Fry the Tomatoes
Heat the vegetable oil in a deep skillet over medium-high heat. Once hot, carefully add the breaded tomato slices and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
Hollandaise Sauce

Melt Butter
Melt the butter in a small saucepan over low heat. Allow it to cool slightly while you prepare the egg yolks.

Blend Egg Yolks
In a heatproof bowl, whisk the egg yolks with lemon juice and a pinch of salt until pale and slightly thickened.

Combine Ingredients
Place the bowl over a pot of simmering water (double boiler). Gradually whisk in the melted butter until the sauce thickens and is creamy. Adjust seasoning with salt and cayenne pepper.

In a bowl, gently mix the jumbo lump crab meat with Old Bay seasoning and lemon juice. Be careful not to break the crab meat too much.
