    Slice the eggplant into 1/2-inch thick rounds. Sprinkle both sides with salt and let them sit for about 30 minutes. This step helps to draw out moisture and bitterness.

    In three separate bowls, place the flour in the first bowl, whisk the eggs in the second bowl, and mix the breadcrumbs with black pepper in the third bowl.

    Bread the Eggplant

    Pat the salted eggplant slices dry with a paper towel. Dredge each slice in flour, dip in the beaten eggs, and then coat with breadcrumbs, pressing gently to adhere.
