Method

Preparing the Fish

  1. 1

    Prepare the Fish

Pat the fish fillets dry with paper towels. Season both sides with salt and black pepper.

  2. 2

    Dredge in Flour

Place the flour in a shallow dish. Dredge each fish fillet in the flour, shaking off any excess.

Cooking the Fish

  1. 3

    Sauté the Fish

In a large skillet, melt 2 tablespoons of butter over medium heat. Once hot, add the fish fillets, cooking for about 3-4 minutes per side or until golden brown and cooked through. Remove the fish from the skillet and keep warm.

  2. 4

    Make Lemon Butter Sauce

In the same skillet, add the remaining 2 tablespoons of butter. Once melted, stir in fresh lemon juice and lemon zest, scraping up any browned bits from the bottom of the pan. Stir in chopped parsley and season with salt and pepper to taste.

Cooking the Vegetables

  1. 5

    Sauté the Vegetables

In another skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add asparagus or green beans, season with salt and black pepper, and cook for about 5-7 minutes until tender-crisp.

Serving

  1. 6

    Plate the Dish

Serve the fish fillets topped with the lemon butter sauce alongside the sautéed vegetables. Enjoy!
