Prepare the Filet Tips
In a medium bowl, toss the prime filet mignon tips with olive oil, salt, and black pepper until well coated.

Cook the Filet Tips
Heat a skillet over medium-high heat. Add the filet tips and sear for about 3-4 minutes on each side, or until they reach your desired doneness. Remove from heat and set aside.
Hollandaise Sauce

Prepare the Hollandaise
In a heatproof bowl, whisk the egg yolks and lemon juice until the mixture is pale and thick.

Melt the Butter
In a saucepan, melt the unsalted butter over medium heat until it is fully melted and begins to bubble.

Combine the Mixtures
Slowly drizzle the melted butter into the egg yolk mixture while whisking continuously until the sauce is thick and creamy. Stir in a pinch of salt and cayenne pepper.

Poach the Eggs
In a saucepan, bring water to a simmer and add vinegar. Crack each egg into a small bowl, then gently slide the eggs into the simmering water. Poach for about 3-4 minutes until the whites are set and yolks are still runny. Remove with a slotted spoon and set aside.

Prepare the Hash
Dice the potatoes, red bell pepper, and onion into small pieces.

Cook the Hash
In a large skillet, heat olive oil over medium heat. Add the diced potatoes, bell pepper, and onion. Season with salt and black pepper, and cook, stirring occasionally, for about 15-20 minutes or until the potatoes are golden brown and tender.
