Tortillas and Toppings

Method

Preparation

  1. 1

    Marinating the Protein

In a bowl, combine olive oil, lime juice, minced garlic, chili powder, cumin, salt, and black pepper. Add chicken breast (or steak) to the marinade and coat well. Cover and let it marinate in the refrigerator for at least 30 minutes, preferably 1-2 hours.

  2. 2

    Preparing the Vegetables

While the protein is marinating, slice the bell peppers and onion. Set aside.

Cooking

  1. 3

    Grilling the Protein

Preheat a grill or grill pan over medium-high heat. Remove the chicken (or steak) from the marinade, letting any excess drip off. Grill for about 6-8 minutes per side for chicken, or until the steak reaches desired doneness. Remove from the grill and let rest for a few minutes before slicing.

  2. 4

    Sautéing the Vegetables

In a skillet, add a little olive oil and heat over medium heat. Add the sliced bell peppers and onion. Sauté for about 5-7 minutes until they are softened and slightly charred. Remove from heat.

Assembly

  1. 5

    Assembling the Fajitas

Warm the flour tortillas in a dry skillet or microwave. Slice the grilled chicken (or steak) into strips. On each tortilla, layer the grilled protein, sautéed vegetables, and desired toppings like sour cream, guacamole, or shredded cheese. Roll up the tortillas and serve immediately.
