Preparing the Churro Dough

    Boil Water and Butter

    In a medium saucepan, combine 1 cup of water, 1 cup of unsalted butter, 2 tablespoons of granulated sugar, and 1 teaspoon of salt. Bring to a boil over medium heat, stirring occasionally to melt the butter.

    Add Flour

    Once the mixture comes to a boil, remove the saucepan from heat. Add 1 cup of all-purpose flour all at once and stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

    Incorporate Eggs

    Allow the dough to cool for about 5 minutes. Then, add 2 large eggs and 1 teaspoon of vanilla extract to the dough. Stir vigorously until the eggs are fully incorporated and the dough is smooth and shiny.

Making the Cinnamon Sugar

    Mix Cinnamon Sugar

    In a small bowl, combine 1 cup of granulated sugar and 2 tablespoons of ground cinnamon. Mix well and set aside for later use.

Frying the Churros

    Heat Oil

    In a deep pot or heavy skillet, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Pipe Churros

    Transfer the churro dough to a piping bag fitted with a star tip. Carefully pipe 4-6 inch strips of dough into the hot oil, cutting them with scissors to release them.

    Fry Until Golden

    Fry the churros in batches, making sure not to overcrowd the pot. Fry for about 2-3 minutes on each side or until golden brown and crispy.

    Drain and Coat

    Using a slotted spoon, remove the churros from the oil and drain on paper towels. While they are still warm, roll them in the cinnamon sugar mixture until fully coated.
