Beat the Eggs

In a mixing bowl, crack the 4 large eggs and add 1 tsp of salt and 1 tsp of black pepper. Whisk together until well combined.

Heat the Pan

In a medium non-stick skillet, heat 1 tbsp of olive oil or butter over medium heat until hot.

Cooking

Scramble the Eggs

Pour the beaten eggs into the hot skillet. Allow them to sit for a few seconds, then gently stir with a spatula, pushing the eggs from the edges to the center. Continue cooking until just set but still slightly runny.

Add Cheese

Sprinkle the 1 cup of shredded cheese over the scrambled eggs and remove the skillet from heat. Stir gently to combine until the cheese is melted.

Assembly

Wrap the Burrito

Lay out the 2 flour tortillas on a clean surface. Divide the scrambled egg and cheese mixture evenly between the two tortillas. Top each with 1/2 cup of salsa.

Roll the Burrito

Fold in the sides of each tortilla and then roll tightly from the bottom to the top to secure the filling inside.

Serving

Cut the burritos in half if desired and serve warm with additional salsa on the side.
