    Prepare the Crepe Batter

    In a mixing bowl, whisk together the flour, milk, eggs, and salt until smooth. Let the batter rest for 30 minutes.

    Cook the Crepes

    In a non-stick skillet over medium heat, melt 1 tablespoon of butter. Pour in about 1/4 cup of batter and swirl to coat the bottom. Cook for 1-2 minutes until the edges lift, then flip and cook for another minute. Repeat with remaining batter, adding more butter as needed.

Filling

    Cook the Beef

    In a large skillet, brown the ground beef over medium heat. Drain excess fat, then add garlic, salt, and black pepper. Cook for an additional 2 minutes.

    Combine Filling Ingredients

    In a bowl, mix the cooked beef, ricotta, mozzarella, parmesan, spinach, salt, and black pepper until well combined.

Little Village Sauce

    Sauté Onions and Garlic

    In a saucepan, heat olive oil over medium heat. Add diced onions and cook until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute.

    Prepare the Sauce

    Add canned crushed tomatoes, basil, oregano, sugar, salt, and black pepper to the saucepan. Simmer for 20 minutes to allow flavors to meld.

Assembly

    Fill the Crepes

    Take a prepared crepe and spoon about 2 tablespoons of the filling mixture along one edge. Roll the crepe tightly to encase the filling.

    Prepare the Baking Dish

    Preheat your oven to 375°F (190°C). Spread a thin layer of Little Village Sauce at the bottom of a baking dish.

    Assemble and Bake

    Place the filled crepes seam-side down in the baking dish. Pour the remaining sauce over the top, sprinkle with extra mozzarella if desired. Bake for 25-30 minutes until heated through and cheese is bubbly.
