Prepare the crispy leeks
Heat vegetable oil in a pan over medium heat. Dredge the sliced leeks in cornstarch and fry until golden and crispy. Remove and drain on paper towels.

Sauté the spinach
In the same skillet, add the remaining tablespoon of olive oil and sauté minced garlic for 1 minute. Add fresh spinach and sauté until wilted. Season with salt and pepper.

Make the shiitake-miso broth
In a saucepan, combine sliced shiitake mushrooms, vegetable broth, miso paste, and soy sauce. Bring to a simmer and cook for about 5 minutes.
