Cooking Instructions
Cook the Tortellini
In a large pot of boiling salted water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.
Prepare the Sauce
In a large skillet, heat olive oil and butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
Add Vegetables
Add the diced red bell pepper and sliced mushrooms to the skillet. Cook for about 5 minutes until softened. Stir in the fresh spinach and cook until wilted.
Make the Cream Sauce
Pour in the heavy cream and bring to a simmer. Stir in the grated Romano cheese until melted and combined. Season with salt and black pepper to taste.
Combine Tortellini and Sauce
Add the cooked tortellini to the skillet and gently toss to coat in the cream sauce. Cook for an additional 2-3 minutes to heat through.
Prepare the Topping
In a small pan, toast the bread crumbs over medium heat until golden brown. Set aside.
