Prepare the Rice
In a medium saucepan, bring 2 cups of water to a boil. Add the jasmine rice, cover, and reduce heat to low. Simmer for 15 minutes or until the rice is tender and water is absorbed. Fluff with a fork and set aside.

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Salmon
Place the salmon filets on a baking sheet lined with parchment paper. Drizzle with olive oil, lemon juice, salt, and black pepper.

Add Toppings
Layer the sliced tomato, roasted red onion, and artichoke hearts on top of the salmon filets. Sprinkle the toasted bread crumbs evenly over the top.

Roast the Salmon
Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.

Serve the roasted salmon on a plate with a side of jasmine rice. Enjoy!
