    Roast the Garlic

    Preheat your oven to 400°F (200°C). Cut the tops off the whole garlic bulbs to expose the cloves and drizzle with olive oil. Wrap in foil and roast for 30-35 minutes until soft and caramelized.

    Prepare the Tomato Sauce

    While the garlic is roasting, chop the plum tomatoes and place them in a saucepan over medium heat. Cook for about 10-15 minutes, stirring occasionally, until the tomatoes break down into a sauce. Season with salt and black pepper to taste.

    Prepare the Cheese

    Once the garlic is roasted, allow it to cool slightly, then squeeze the soft garlic into a bowl and mix with the fresh mozzarella cheese. Tear the mozzarella into bite-sized pieces.

    Assemble the Margherita

    Spread the tomato sauce evenly on a baking sheet or pizza stone. Distribute the roasted garlic and mozzarella evenly over the sauce. Add fresh basil leaves on top.

    Bake

    Place the assembled Margherita in the oven at 400°F (200°C) and bake for 10-12 minutes, or until the cheese is bubbly and slightly golden.

    Serve

    Remove from the oven, let cool for a few minutes, then slice and serve hot, drizzled with a little more olive oil if desired.
