Preparation of the Steak

    Season and Grill

    Season the CAB center cut NY strip steaks with salt and black pepper. Heat olive oil in a grill pan over medium-high heat. Grill the steaks for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest.

Making the Red Wine Demi Glace

    Prepare the Sauce

    In a saucepan, combine red wine and beef stock. Bring to a boil and reduce to a simmer until the liquid is reduced by half. Stir in butter until melted and combined. Season with salt and pepper to taste.

Chèvre Mashed Potatoes

    Cook and Mash Potatoes

    Boil the peeled and cubed potatoes in salted water until tender. Drain and return to pot. Add chèvre cheese, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Assembly

    Plate the Dish

    Place a generous scoop of chèvre mashed potatoes on each plate. Slice the grilled steak and arrange on top of the potatoes. Drizzle with the red wine demi glace and top with crumbled Gorgonzola and frizzled onions.
