Preparing the Lamb

    Preheat the Oven

    Preheat your oven to 180°C (350°F).

    Prepare the Marinade

    In a small bowl, mix together olive oil, minced garlic, chopped fresh rosemary, salt, and black pepper to create a marinade.

    Marinate the Lamb

    Rub the marinade all over the lamb shoulder, ensuring to cover it evenly. Allow it to marinate for at least 30 minutes, or up to overnight in the refrigerator for better flavor.

    Roast the Lamb

    Place the marinated lamb in a roasting pan and roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 63°C (145°F) for medium-rare.

    Prepare the Vegetables

    While the lamb is roasting, wash and chop the carrots, zucchini, bell peppers, and red onion into bite-sized pieces.

    Season the Vegetables

    In a large bowl, toss the chopped vegetables with olive oil, salt, and black pepper until evenly coated.

    Roast the Vegetables

    About 30 minutes before the lamb is done, add the seasoned vegetables to the roasting pan around the lamb and continue roasting until the vegetables are tender and slightly caramelized.

Serving

    Once the lamb is cooked, remove it from the oven and let it rest for 10-15 minutes before carving. Serve slices of the lamb with the roasted seasonal vegetables.
