Preparing the Octopus

    Clean the Octopus

    Rinse the octopus under cold water. Remove the beak and eye if not already done by your fishmonger.

    Cook the Octopus

    Place the octopus in a large pot of salted boiling water. Simmer for about 45-60 minutes until tender. Test by inserting a fork into the thickest part of a tentacle; if it slides off easily, it's done.

    Cool and Prepare for Grilling

    Once cooked, remove the octopus from the water and let it cool. Once cool, cut the tentacles from the body and slice into manageable portions.

Grilling the Octopus

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Marinate the Octopus

    In a bowl, mix the olive oil, minced garlic, and chopped parsley. Add the octopus pieces and toss to coat evenly. Let it marinate for at least 30 minutes.

    Grill the Octopus

    Place the marinated octopus on the grill. Grill for about 2-3 minutes on each side until charred and heated through.

Preparing the Citrus Dressing

    In a small bowl, whisk together the lemon juice, orange juice, honey, salt, and black pepper until well combined.

Serving

    Arrange the grilled octopus on a serving platter. Drizzle with the citrus dressing before serving.

    Optionally, garnish with additional chopped parsley and lemon wedges.
