Make the Spice Rub
In a separate bowl, combine flour, cornstarch, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Mix well.

Soak the Onions
Pour buttermilk over the onion rings, making sure they are fully submerged. Let them soak for at least 30 minutes.

Coat the Onion Rings
After soaking, take the onion rings out of the buttermilk and let the excess drip off. Dredge them in the spice rub mixture, ensuring they are well coated.

Prepare for Frying
In a deep skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Onion Rings
Fry the onion rings in batches until golden brown, about 3-4 minutes per batch. Remove them and place on paper towels to drain excess oil.

Crumble goat cheese over the hot onion rings and serve immediately.
