    Prepare the Chicken

    Preheat your oven to 325°F (160°C). Pat the whole chicken dry with paper towels. Rub the chicken all over with olive oil, and season generously with salt and black pepper. Place the thyme sprigs and 3 crushed garlic cloves inside the cavity of the chicken.

    Roast the Chicken

    Place the chicken breast-side up in a roasting pan. Arrange the cherry tomatoes and remaining garlic cloves around the chicken. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (75°C). Baste the chicken with the pan juices occasionally.

    Make Chive Mash

    While the chicken is roasting, peel and dice the potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter and chopped chives, then mash until smooth. Season with salt and pepper to taste.

    Prepare Garlic Jus

    Once the chicken is done, remove it from the roasting pan and let it rest. Pour the pan juices into a saucepan. Add chicken stock and simmer for about 5-10 minutes until slightly reduced. Strain if desired.

    Serve

    Carve the chicken and serve it with chive mash, roasted tomatoes, and drizzle with garlic jus.
