Preparing the Jerk Fried Calamari

Prepare the Batter
In a large bowl, combine the all-purpose flour, cornstarch, jerk seasoning, salt, and black pepper. Gradually whisk in water until the batter is smooth and well combined.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Dip the calamari rings into the batter, allowing any excess to drip off, then carefully place them into the hot oil. Fry in batches for about 2-3 minutes or until golden brown and crispy.

Drain and Serve
Remove the fried calamari with a slotted spoon and drain on paper towels. Serve hot with pickles and tartar sauce on the side.
