Main Ingredients

Method

Preparation Steps

  1. 1

    Prepare the Chipotle Mayo

In a small bowl, mix together mayonnaise and chipotle sauce until well combined. Set aside.

  2. 2

    Cook the Sausage

In a skillet over medium heat, add the sausage links and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

  3. 3

    Fry the Eggs

In the same skillet, add oil and heat over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny side up, over easy, etc.), about 3-4 minutes. Season with salt and pepper.

  4. 4

    Prepare the Avocado

While the eggs are cooking, slice the avocado in half, remove the pit, and scoop out the flesh. Mash it lightly with a fork, adding salt to taste.

  5. 5

    Assemble the Sandwich

On one slice of bread, spread a layer of chipotle mayo. Add the mashed avocado, followed by the cooked sausage links, and top with the fried eggs. Finish with the other slice of bread.

  6. 6

    Serve

Cut the sandwich in half if desired, and serve immediately while warm.
