Activate the Yeast
In a small bowl, combine 1/2 cup of warm water (about 100°F/38°C) with the sugar and yeast. Stir gently and let it sit for about 5-10 minutes until frothy.

Mix the Dough
In a large mixing bowl, combine the flour and salt. Make a well in the center, and pour in the activated yeast mixture and the remaining water. Stir until the dough comes together.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Form it into a ball.

First Rise
Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours until it doubles in size.

Shape the Baguettes
After the first rise, punch down the dough to release air. Divide the dough into two equal pieces and shape each piece into a long baguette, about 14 inches long.

Second Rise
Place the shaped baguettes on a baking sheet dusted with cornmeal. Cover with a damp cloth and let them rise for another 30-45 minutes.

Preheat the Oven
While the baguettes are rising, preheat your oven to 450°F (232°C) and place a shallow pan at the bottom of the oven for steaming.

Prepare for Baking
After the second rise, use a sharp knife or razor blade to make several diagonal slashes on the top of each baguette.

Steam and Bake
Pour 1 cup of water into the shallow pan in the oven (be careful of the steam). Immediately place the baguettes in the oven and bake for 20-25 minutes until golden brown.
