Prepare Chicken
Preheat your grill or skillet over medium-high heat. While it's heating, season the chicken breasts with olive oil, Southwestern spice blend, salt, and black pepper on both sides.

Chop Vegetables
While the chicken is marinating, chop the red bell pepper, yellow bell pepper, and red onion into bite-sized pieces.

Prepare Corn and Beans
If using frozen corn, thaw it in the microwave or by running it under warm water. If using canned corn, simply drain it. Drain and rinse the black beans as well.

Cook Chicken
Place the seasoned chicken breasts on the grill or in the skillet. Cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.

Sauté Vegetables
In a separate skillet, add a tablespoon of olive oil over medium heat. Add the chopped bell peppers and red onion. Sauté for about 5-7 minutes until the vegetables are tender.
