Method

Making the Dough

  1. 1

    Activate the Yeast

In a large mixing bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix the Dough

Add the salt and all-purpose flour gradually to the yeast mixture. Mix until a dough forms.

  3. 3

    Knead the Dough

Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

  4. 4

    First Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shaping and Boiling

  1. 5

    Preheat the Oven

Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

  2. 6

    Shape the Baguettes

Once the dough has risen, punch it down and divide it into 4 equal pieces. Shape each piece into a long baguette.

  3. 7

    Prepare the Baking Soda Bath

In a large pot, bring about 4 cups of water to a boil. Add the baking soda carefully, as it will bubble up.

  4. 8

    Boil the Baguettes

Gently place one baguette at a time into the boiling soda water for about 30 seconds, then remove and place on the prepared baking sheet.

Baking

  1. 9

    Add Toppings

Brush the boiled baguettes with melted butter and sprinkle with coarse sea salt.

  2. 10

    Bake

Bake the baguettes in the preheated oven for 15-20 minutes, or until they are golden brown.

  3. 11

    Cool and Serve

Remove the baguettes from the oven and let them cool on a wire rack before slicing and serving.
