Prepare the Filling

    Marinate the Fish or Chicken

    In a large bowl, combine olive oil, lime juice, cumin, paprika, salt, and black pepper. Add the fish fillets or chicken breasts and make sure they are well coated. Cover and let marinate for at least 30 minutes in the refrigerator.

    Cook the Fish or Chicken

    Heat a skillet over medium-high heat. Add a little olive oil if needed. Remove the fish or chicken from the marinade and cook for about 4-5 minutes on each side, or until cooked through and flaky (for fish) or juices run clear (for chicken). Remove from heat and let rest for a few minutes.

    Shred the Chicken (if using)

    If you are using chicken, shred it with two forks once it's cooled slightly.

Assemble the Tacos

    Warm the Tortillas

    In a dry skillet or on a griddle, warm the corn tortillas for about 30 seconds on each side until they are soft and pliable.

    Fill the Tacos

    Place the cooked fish or shredded chicken onto each tortilla. Add shredded cheese, pico de gallo, and pickled red onion on top.

    Drizzle with Chipotle Ranch

    Drizzle chipotle ranch dressing over the top of each taco.

    Serve with Chips

    Serve the tacos with tortilla chips and any extra salsa or toppings on the side.
