Prepare the Base

    Cook Quinoa

    In a medium saucepan, combine 1 cup of quinoa and 2 cups of vegetable broth. Bring to a boil over medium heat, then reduce the heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

Sauté Vegetables

    Sauté Spinach and Bell Pepper

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped red bell pepper and cook for about 3-4 minutes until softened. Next, add 2 cups of spinach and sauté until wilted, about 2 minutes. Add salt, black pepper, and red pepper flakes to taste.

    Add Cherry Tomatoes

    Add 1 cup of halved cherry tomatoes to the skillet and cook for another 2-3 minutes until they are slightly blistered. Remove from heat and set aside.

Cook Eggs

    In the same skillet, you can either clean it or use it as is for flavor. Crack 4 whole eggs into the skillet and cook them sunny-side up or to your preferred doneness. Season with salt and black pepper.

Assemble the Bowl

    In large bowls, layer the cooked quinoa as the base. Top with the sautéed vegetable mixture, followed by the cooked eggs. Slice the avocado and place it on top of the bowl. Sprinkle 1 cup of crumbled feta cheese over each bowl. Adjust seasoning with extra salt, black pepper, and red pepper flakes if desired.
