Cooking Pasta

Boil Cavatappi Noodles
In a large pot of boiling salted water, cook 8 cups of cavatappi noodles according to package instructions until al dente. Drain and set aside.
Preparing Cheese Sauce

Make Roux
In a medium saucepan, melt 4 tablespoons of unsalted butter over medium heat. Once melted, whisk in 1 cup of all-purpose flour and cook for about 2 minutes, stirring constantly.

Add Milk
Slowly add 3 cups of milk to the roux while whisking continuously to avoid lumps. Cook for another 3-4 minutes until the mixture thickens.

Incorporate Cheese
Reduce heat to low and add 4 ounces of cream cheese and 2 cups of shredded cheddar cheese. Stir until melted and smooth.

Add Chipotle Flavor
Stir in 2 tablespoons of diced chipotle peppers in adobo sauce, 1 teaspoon of salt, and 1 teaspoon of black pepper. Mix well and keep on low heat.
Combining Ingredients

Combine Pasta and Sauce
Add the drained cavatappi noodles to the cheese sauce and stir until the noodles are evenly coated.

Add Pulled Pork
Fold in 2 cups of house pulled pork into the pasta and sauce mixture.
Serving

Plate and Garnish
Serve the creamy chipotle mac and cheese in bowls, topped with 1 cup of grilled jalapenos and 1 cup of roasted chiles. Enjoy!
