    Prepare the Ingredients

    Start by dicing the onion and mincing the garlic cloves. Set aside.

    Prepare the Green Chilies

    If using fresh green chilies, roast them over an open flame until the skin is charred. Place them in a bowl and cover with plastic wrap for about 10 minutes, then peel the skin off, remove the seeds, and chop them. If using canned green chilies, simply drain and chop.

    Chop the Cilantro

    Rinse the cilantro under cold water, shake off excess moisture, and roughly chop the leaves. Set aside for garnish.

Cooking

    Sear the Chicken

    In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt and black pepper. Once the oil is hot, add the chicken breasts to the skillet and sear for about 5-6 minutes on each side until they are golden brown. Remove the chicken from the skillet and set aside.

    Sauté Onion and Garlic

    In the same skillet, add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and sauté for an additional minute until fragrant.

    Stir in the chopped green chilies, cumin, paprika, and additional salt and black pepper to taste. Cook for about 2 minutes, allowing the flavors to meld.

    Add Chicken Broth and Simmer

    Pour in the chicken broth and bring to a simmer. Return the seared chicken breasts to the skillet, cover, and let simmer for about 15-20 minutes or until the chicken is cooked through and tender.

    Once the chicken is fully cooked, remove it from the skillet and slice it. Serve it on a platter, drizzled with the sauce from the skillet and garnished with the chopped cilantro.
