In a skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken breasts with cumin, paprika, salt, and black pepper. Cook the chicken for about 6-7 minutes on each side or until fully cooked. Remove from skillet and let cool.

In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion, minced garlic, and diced Fresno peppers over medium heat for about 4-5 minutes until softened.

Once the chicken has cooled, shred it using two forks or your hands into bite-sized pieces.

In a large bowl, combine the shredded chicken, sautéed vegetables, chopped cilantro, and shredded cheddar cheese. Squeeze the lime juice over the mixture and stir until well combined.

Place a generous amount of the chicken filling in the center of each flour tortilla. Roll the tortillas tightly and tuck in the sides to secure the filling.
