Fresno Chicken Chimi Ingredients

Method

Fresno Chicken Chimi Directions

  1. 1

    Prepare the Chicken

In a skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken breasts with cumin, paprika, salt, and black pepper. Cook the chicken for about 6-7 minutes on each side or until fully cooked. Remove from skillet and let cool.

  2. 2

    Sauté the Vegetables

In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion, minced garlic, and diced Fresno peppers over medium heat for about 4-5 minutes until softened.

  3. 3

    Shred the Chicken

Once the chicken has cooled, shred it using two forks or your hands into bite-sized pieces.

  4. 4

    Mix the Filling

In a large bowl, combine the shredded chicken, sautéed vegetables, chopped cilantro, and shredded cheddar cheese. Squeeze the lime juice over the mixture and stir until well combined.

  5. 5

    Assemble the Chimis

Place a generous amount of the chicken filling in the center of each flour tortilla. Roll the tortillas tightly and tuck in the sides to secure the filling.

  6. 6

    Cook the Chimis

In the skillet, place the rolled chimi seam-side down and cook over medium heat for about 2-3 minutes on each side until golden brown and crispy.

  7. 7

    Serve

Cut the chimis in half and serve warm with sour cream on the side for dipping.
