Preparing the Fish

    Make the Batter

    In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper. Gradually add the cold beer or sparkling water, stirring until the batter is smooth and thick. Let it rest for about 15 minutes.

    Heat the Oil

    In a deep frying pan or a large pot, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the top, it's ready.

    Batter the Cod

    Pat the cod fillets dry with paper towels. Dip each fillet into the batter, ensuring it's completely coated.

    Fry the Fish

    Carefully place the battered cod fillets into the hot oil, frying them in batches to avoid overcrowding. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

    Cut the Potatoes

    Peel the potatoes and cut them into thick strips to form chips.

    Fry the Chips

    In the same oil used for frying the fish, add the potato chips in batches and fry for about 5-7 minutes or until they are golden and crispy. Remove and drain on paper towels, then sprinkle with salt.

Making the Tartar Sauce

    Combine Ingredients

    In a small bowl, mix together the mayonnaise, finely chopped pickles, capers, lemon juice, and dill until well combined. Adjust seasoning to taste.
