Method

Cooking the Base

  1. 1

    Rinse the Quinoa

Rinse 1 cup of quinoa under cold water for about 2 minutes to remove any bitterness.

  2. 2

    Cook the Quinoa

In a medium saucepan, combine the rinsed quinoa with 2 cups of vegetable broth. Bring to a boil over medium heat, then reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is fluffy and the liquid is absorbed.

  3. 3

    Fluff the Quinoa

Remove from heat and let it sit covered for 5 minutes. Then, fluff the quinoa with a fork.

Preparing the Vegetables

  1. 4

    Chop the Vegetables

While the quinoa is cooking, chop the cherry tomatoes, cucumber, red bell pepper, avocado, and red onion into bite-sized pieces.

  2. 5

    Chop the Cilantro

Finely chop the fresh cilantro and set aside.

Making the Dressing

  1. 6

    Combine Dressing Ingredients

In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of lime juice, 1 tablespoon of honey, 0.5 teaspoon of salt, and 0.5 teaspoon of black pepper until well combined.

Assembling the Dish

  1. 7

    Combine Ingredients

In a large bowl, combine the cooked quinoa, chopped vegetables, and cilantro.

  2. 8

    Add Dressing

Drizzle the dressing over the quinoa and vegetables, and toss gently to combine.

  3. 9

    Serve

Taste and adjust seasoning if necessary. Serve immediately or chill in the fridge for up to an hour before serving.
