Prepare the Eggs
In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Cook the Eggs
In a non-stick skillet, melt the butter over medium heat. Pour in the egg mixture and gently stir with a spatula until the eggs are scrambled and fully cooked, about 3-5 minutes. Remove from heat and stir in the shredded cheddar cheese until melted.

Warm the Tortillas
In a dry skillet over medium heat, warm the flour tortillas for about 30 seconds on each side until soft and pliable.

Make the Salsa
In a mixing bowl, combine diced tomatoes, red onion, cilantro, lime juice, and salt. Mix well and let sit for at least 10 minutes to allow flavors to meld.
Assembly

Assemble the Burrito
Place a portion of the scrambled eggs in the center of each tortilla. Fold the sides over the filling, then roll the tortilla tightly from the bottom up to enclose the filling.

Cut the burrito in half and serve with house-made salsa on the side.
