Add Cream and Culture
Once the milk is at the desired temperature, add the cream and blue cheese culture. Stir gently for about 1 minute to combine.

Add Rennet
Dilute the rennet in a small amount of cool, non-chlorinated water. Add this mixture to the milk and stir gently for about 30 seconds.

Let it Set
Cover the pot and let it sit undisturbed for about 1 hour at room temperature, until the curds have formed.

Cut the Curds
Once the curds have formed, use a long knife to cut them into small cubes, about 1 inch in size. Let them rest for 5 minutes.

Cook the Curds
Gently heat the curds to 38°C (100°F) while stirring gently. Maintain this temperature for about 30 minutes, stirring occasionally.

Drain the Curds
Line a colander with cheesecloth and pour the curds into it. Allow the whey to drain for about 30 minutes.

Salt the Curds
Once drained, transfer the curds to a bowl and add salt. Mix gently to incorporate the salt evenly.

Transfer the curds into a cheese mold. Press gently to shape the cheese and expel any remaining whey.

Place the molded cheese in a cool, humid environment to age for at least 4-6 weeks. During this time, pierce the cheese with a skewer to allow air to penetrate and develop blue veins.
