Preparing the Dough

    Activate Yeast

    In a small bowl, combine warm water (1.5 cups) and sugar (1 tsp). Sprinkle the active dry yeast (2 tsp) over the water and let it sit for about 5-10 minutes until it becomes frothy.

    Mix Dough

    In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1.5 tsp). Create a well in the center and pour in the yeast mixture. Mix until a dough forms.

    Knead the Dough

    Turn the dough out onto a floured surface and knead for about 10 minutes until smooth and elastic. If the dough is too sticky, add a little more flour as needed.

    First Rise

    Place the kneaded dough in a lightly greased bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.

Shaping and Second Rise

    Shape the Baguettes

    After the dough has risen, punch it down and divide it into 3 equal pieces. Shape each piece into a long baguette by rolling it gently on a floured surface.

    Place the shaped baguettes onto a baking sheet lined with parchment paper, dusted with cornmeal or flour (0.25 cups). Cover with a cloth and let them rise for another 30-45 minutes.

Baking

    Preheat Oven

    Preheat your oven to 450°F (232°C). Place a shallow pan at the bottom of the oven to hold water for steam.

    Once the baguettes have risen, use a sharp knife to make a few diagonal slashes on the tops of the loaves.

    Carefully pour 1 cup of water into the shallow pan at the bottom of the oven to create steam. Place the baguettes in the oven and bake for 20-25 minutes, or until golden brown and crusty.
